More than anything else, Evey loves to bake. Every weekend we spend half of Saturday & half of Sunday in the kitchen together, mixing, decorating and cleaning up. Maybe her favourite thing to bake is a batch of chocolate chip cookies – not because they are for her, but because she likes to make them for her dad!
We have tried a few recipes, but this is the one we have settled on, mostly because it is beautifully easy.
Ingredients
- 2 cups + 2 tbsp all purpose flour
- One tsp baking soda
- ½ tsp salt
- 1 cup butter, softened
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 egg
- Two tsp vanilla extract
- 2 cups of chocolate chips
 Method
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In another bowl combine the butter and sugars until light and fluffy.
- Beat in the egg and the vanilla extract adding a spoonful of the flour mix as you do, to prevent the mix from separating.
- Add the chocolate chips to this mixture and stir until evenly distributed.
- Gradually incorporate the rest of the flour mixture.
- Refrigerate the dough for at least 30 minutes (or up to 48 hours).
- Preheat the oven to 375 degrees F.
- Drop the dough a tablespoonful at a time onto parchment-lined baking sheets 2″ apart.
- Bake for about 8 minutes to get a softer, chewier cookie and 10 minutes for a crunchier cookie.
Perfect sweet treat! Chocolate chip cookies are my favorite, I love to add some walnuts or pecans in mine!
They look tasty. Wow I have everything I need to make them.
