With Mother’s Day just a few short weeks away, it’s time to start thinking about what you’re going to give that special lady in your life. Whether it’s your mom, wife, sister, or friend, every mom deserves a special treat on Mother’s Day. However, yummy treats don’t have to be packed with sugar and other unhealthy ingredients. So with that in mind, we’ve compiled a few tasty and healthy recipes you can make for the moms in your life.

Red Velvet Pancakes

This recipe is great because first of all, who doesn’t love red velvet? And second of all, it’s so easy to make! These red velvet pancakes are the perfect breakfast for mom and it can easily be served in bed, like all Mother’s Day breakfasts should be. This recipe yields one pancake so be sure to add the amount of ingredients for how many pancakes you’re wanting to make.

Ingredients:

  • 2 tbsp whole-wheat pastry flour
  • 2 tbsp + 1 tsp oat bran
  • 1/8 tsp salt
  • 1/2 tsp baking powder
  • 2 tbsp cocoa powder
  • 1/3 cup pureed raspberries
  • 1/2 tsp vanilla
  • 1 tbsp oil
  • 1-2 tbsp sugar
  • Milk to desired thickness

Start by mixing the dry ingredients together. Add in the wet ingredients and mix. After the ingredients are prepped, make your pancakes! These are a great sweet breakfast without a lot of sugar. It’s important to find low-sugar treats, especially because 69% of American adults between 35 and 44 are missing at least one tooth. So this breakfast will satisfy a sweet tooth without actually hurting the tooth!

Frozen Yogurt Cupcakes

Cupcakes are one of the most popular dessert choices. However, they’re also full of sugar. These fat-free frozen yogurt cupcakes are a great, healthy alternative. And with only four ingredients, you can’t go wrong.

Ingredients:

  • 1 1/2 cups vanilla snap cookies
  • 2 pints nonfat vanilla frozen yogurt
  • 2 tbsp melted butter
  • 2 1/2 cups sliced strawberries

Pull out your muffin tin and coat it with cooking spray. Take the cookies and crush them or put them in a food processor until you have fine crumbs. Mix the cookie crumbs and the melted butter to form your cupcake base — press the mixture into the bottom of the muffin cups. In a food processor or blender, mix the frozen yogurt and strawberries together until the berries are finely chopped. Place the mixture into each muffin cup and top with an additional strawberry slice. Freeze at least three hours before enjoying! Not only are these cupcakes easy to make and delicious, they’re a great way to get started on getting the recommended 2 servings of fruit you should have each day.

Dark Chocolate Turtles

When it comes to candy, chocolate is usually the frontrunner. And with seven out of 10 consumers handing out candy for Halloween last year, why not continue on the candy train and make a chocolate treat for Mother’s Day? These homemade chocolate turtles are a great way to get a chocolate fix without going overboard on the sugar.

Ingredients:

  • 1 cup pitted dates
  • 2 oz pecan halves
  • 3 1/2 oz dark chocolate

In a food processor, process the dates until they become sticky and thick. Roll the mixture into about 15 small balls and place them on a lightly greased baking sheet. Put two or three pecan halves into the date balls and place in the freezer for 10 minutes. In a small saucepan, heat the chocolate until melted and smooth. Pour the melted chocolate over the date and pecan balls and set for 10 more minutes in the freezer. This recipe is super easy to make and is a great choice for a healthy sweet treat.
