Rhubarb Dump CakeBefore moving to Canada, I had never heard of a dump cake – all those years I wasted making things from scratch! Although I do enjoy baking, it is nice to have a few of these quick & delicious items up to your sleeve, especially in a household as busy as ours. I know you would like some of these handy dessert gems too – so here you go – a delicious rhubarb dump cake that will wow the family

Ingredients

1 lb. fresh rhubarb, chopped (about 4 cups)
1/2 cup sugar
One pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
One pkg. (2-layer size) white cake mix
1 cup water
1/3 cup butter, melted
3/4 cup thawed COOL WHIP Whipped Topping
Instructions
  1. Pre-heat the oven to 350ºF.
  2. Chop the rhubarb into approximately 1 inch long pieces
  3. Place the rhubarb into a 13×9-inch baking dish
  4. Sprinkle the rhubarb with sugar, then dry gelatin mix.
  5. Beat together the cake mix, water and butter with a whisk until blended.
  6. Pour the cake mix over the rhubarb and spread to completely cover the fruit.
  7. Bake for 45 min. or until golden brown.
  8. Serve warm topped with COOL WHIP.

Substitutes

  1. Prepare using a yellow cake mix.
  2. Use sliced apples Sprinkled with cinnamon

Special Extra

Top each serving with a dash of ground cinnamon or ginger.

Variations

This easy-to-make dessert is equally delicious when served chilled.
