Many people find that using coconut flour can result in a crumbly, dry texture to their baking, but by using plenty of liquid & eggs for binding, you can produce scrumptious, light, moist cakes and breads.
If you have never worked with it before – a few words of caution – Do not try to do a straight substation of other flours with coconut flour!
The recipes below take all of the guess work out of it for you. These are all tried and tested and will produce delicious foods – your family will be clamoring for you to make more. Our particular favorite from this list is the Paleo Spiced Plum Cake. It was great fun to make this, have the boys wolf it down & then see the look of horror on their faces when they found out it was ‘healthy’ !
